A friend of mine was looking for a recipe for cooking artichokes (my all time favorite veggie!), so I shared with her our family recipe for Stuffed Artichokes and figured I would also post it here.
Stuffing for approx 4 artichokes:
Take the artichoke in 2 hands and pry open the leaves a little bit. Take a pair of kitchen scissors and trim the tips of the leaves and cut the stem so it will rest flat in the bottom of the pan.
Mix all ingredients:
3/4 cup Italian bread crumbs
1/4 cup grating cheese (Parmesan or Romano)
1 Tbsp parsley
1 Tbsp basil
2 garlic cloves diced, or 1/4 tsp garlic powder
Spoon in the stuffing. (You kind of open the leaves up like petals on a flower and fill behind all the "petals")
In a large pan, put in 2 inches of water and 2 Tbsp olive oil. Drizzle 1/2 tsp of olive oil on top of each artichoke. (You can substitute lemon juice for the olive oil in both cases if needed).
Place artichokes in pan with water. Cover and let boil. When boiling, turn burner down to a simmer until artichokes are cooked (approx 1 hour - The leaves will pull off pretty easily when it's done).
To eat it - you pull the leaves off and scrape the underside with your teeth. Throw away the rest of the leaf. Once the leaves are eaten, you can pull off the remaining softer leaves underneath and you will see a "fuzzy" part (that's the choke). Scrape that part out with a spoon or knife and you can eat all that is left (the heart!).
It is quite a unique experience if you've never had them before!

Yum! Those look great! I've never had stuffed artichokes and never knew how one would go about eating one, so thanks for the instructions! I love artichokes, too. I might have to try this sometime.
