Pear Bread



This is probably one of my all time favorite breads to eat. Every year we make a whole bunch of loaves to pass out to friends and family and this year we froze quite a few as well. Enjoy!

INGREDIENTS:
* 3 cups flour
* 1/4 tsp baking powder
* 1 tsp baking soda
* 1 tsp salt
* 1 tbsp ground cinnamon
* 3/4 cup vegetable oil
* 3 eggs
* 2 cups peeled shredded pears
* 1 cup chopped pecans
* 2 tsp vanilla extract
* 2 cups sugar


DIRECTIONS:
1. In lg bowl combine flour, baking powder, baking soda, salt, and cinnamon. Make a well in the center.
2. In a separate bowl, combine oil, eggs, sugar, pears, pecans, and vanilla. Blend well. Add to well of dry ingredients.
3. Stir just until moist. Spoon into 2 greased and floured 8x5x3 loaf pans.
4. Bake at 325 for 1 hr 15 min. Cool on a wire rack before removing.

Yum! This sounds good! I've never heard of pear bread before. I wonder if you can peel and shred the pears in the 2 cup portions and freeze them without losing any quality. Then you'd have them on hand to make fresh loaves all winter. Hmmm... might just have to try that...

yes you can! We do that so we can have pear pie too! :)

Hopefully no one tried to make this without the 2 cups of sugar I accidently forgot to mention in the ingredient list ;) All fixed now!
